Rhino Impostor

  • 3 cl Rye
  • 3 cl Grappa Marolo di Moscato
  • 2 cl Suze
  • 2 cl Fennel syrup
  • 1 ds Black Walnut bitters
  • Big grapefruit peel for garnish

Add all ingredients to a mixing glass with ice and stir to chill. Strain into a rocks glass over a large ice cubes. Express grapefruit peel and drape around the rim and ice.

This cocktail is inspired by Ayla’s ‘when the Rhino met the Duck‘: Vulson White Rhino Rye, Suze, Fennel syrup, Black Walnut bitters. No idea about the measurements. I really loved the dry grass of the fennel and the aromatic herby Suze. I wasn’t able to emulate Ayla’s cocktail at all but did end up with a great new drink.
